Back is the early 70s one of my co-workers gave me his recipe.

It is fabulous. I found I could use almost an vegetable I had in my garden.

Ingredients

1
zucchini, or summer squash, cut lenghtwise then into quarters
3
large tomatoes, cut into 8 sections (you can use green tomatoes)
1
large onion, chopped, you can use any onion, purple, red or green
1/4 lb
mushrooms
1/4 c
sugar
1/4 tsp
oregano, dry or fresh
1/4 tsp
freshly ground pepper
1/2 tsp
sea salt
butter

Directions Step-By-Step

Butter a casserole dish. Place onions on bottom and then layer the other vegetables. Sprinkle seasonings on top and dot generously with butter.

Bake covered at 350* for 1 hour.

Serve HOT!
