Hot Vegetarian Rice and Beans
This dish is considered a complete protein.

- 1 c
- brown rice
- pickled jalapeno slices (cut into pieces)
- 1/2 c
- cherry tomatoes (cut into quarters)
- 1/2 c
- diced onions
- 2 c
- 1/4 tsp
- 1 Tbsp
- butter, cold
- 1 3/4 c
- shredded, sharp, chedder cheese
- 1 can(s)
- dark red kidney beans (drained, not rinsed)
1Cut jalapeno's, tomatoes, and onions. Set aside.
2In a medium sauce pan, bring the water, butter, and salt to a boil.
3When the water comes to a boil, add the rice, jalapeno's, tomatoes and onions. Cover with a tight lid and reduce heat to Med-Low. Cook for 45min's.
4When the rice is finished cooking, add cheese and kidney beans. Turn heat up to medium and stir until kidney beans are warm and cheese is melted!
