Ingredients

2
medium sweet potatoes, unpeeled
1/4 c
unsalted butter
1/4 tsp
ground ginger
1/4 tsp
salt
1 tsp
honey

Step-By-Step

1Preheat oven to 400
2Cut potatoes in half crosswise. Cut each half lengthwise into 6 wedges and place onto greased cookie sheet lined with foil. Roast 15 minutes.
3Combine butter, ginger, salt & honey in small saucepan over low heat until butter is melted.
4Baste potatoes with ginger-honey sauce and roast 15 minutes more until fork-tender. Salt & pepper to taste and serve warm.
