This is a very wonderful tasty salad. You can serve it plain or on a bed of lettuce. Family and friends will love it. This is one of my favorite recipes with keeping my weight in check and leaving me full and satisfied at the table. Never leave the table hungry, that's my kind of recipe. Enjoy and "Happy Heart"

Rich in flavor and soulfulness, this is a great go-to dish when you're craving something a little lighter.

Ingredients

3/4 c
dried lentils
2 c
water
1
bay leaf
1/4 c
chopped red pepper or orange pepper
1/4 c
chopped green pepper
3 Tbsp
balsamic vinegar
3 Tbsp
lemon juice
1 clove
chopped garlic
1/4 c
chopped green onions or white onion
1/2 tsp
marjoram
1/2 tsp
thyme or ground thyme
1/4 c
chopped cilantro
1/8 tsp
or more of salt and pepper to taste ( optional)
parsley sprigs

Directions Step-By-Step

Wash lentils well and drain

Combine lentils, 2 cups water and bay leaf in medium saucepan. Bring to boil. Reduce heat, cover and cook just below simmering for 30 minutes, until lentils are cooked but still firm. Cook gently so lentils do not fall apart. Drain and chill lentils until cool to touch.

Combine red,or(orange),green peppers,chopped onions in small bowl.


In a seperate bowl : Combine vinegar, lemon juice, garlic, green onion, all chopped peppers,thyme,marjoram,fresh cilantro,salt and pepper in mixing bowl,large enough to be able to add lentils. Now add the chilled lentils and mix gently.

Cover and chill for 1 hour or longer before serving.

    oh thank you Cin Straw... hay this is just one of my favorits for the nice weather out side on the deck, and besides it's a good one to take to a picnic and it's a hit for sure. I have eaten this as is for a dinner with a little sliced chicken breat on the side.... oh my..... you can even add a little chopped mango in it for a different taste... that is so good too....

    Marti Green this sounds amazing. I love lentil salads and have a bunch of variations I make depending on the time of year and what local veggies are in season. I've never seen this one before though - thank you!
