This is a very wonderful tasty salad. You can serve it plain or on a bed of lettuce. Family and friends will love it. This is one of my favorite recipes with keeping my weight in check and leaving me full and satisfied at the table. Never leave the table hungry, that's my kind of recipe. Enjoy and "Happy Heart"

Blue Ribbon Recipe

Rich in flavor and soulfulness, this is a great go-to dish when you're craving something a little lighter.

Ingredients

3/4 c
dried lentils
2 c
water
1
bay leaf
1/4 c
chopped red pepper or orange pepper
1/4 c
chopped green pepper
3 Tbsp
balsamic vinegar
3 Tbsp
lemon juice
1 clove
chopped garlic
1/4 c
chopped green onions or white onion
1/2 tsp
marjoram
1/2 tsp
thyme or ground thyme
1/4 c
chopped cilantro
1/8 tsp
or more of salt and pepper to taste ( optional)
parsley sprigs

Directions Step-By-Step

Wash lentils well and drain

Combine lentils, 2 cups water and bay leaf in medium saucepan. Bring to boil. Reduce heat, cover and cook just below simmering for 30 minutes, until lentils are cooked but still firm. Cook gently so lentils do not fall apart. Drain and chill lentils until cool to touch.

Combine red,or(orange),green peppers,chopped onions in small bowl.


In a seperate bowl : Combine vinegar, lemon juice, garlic, green onion, all chopped peppers,thyme,marjoram,fresh cilantro,salt and pepper in mixing bowl,large enough to be able to add lentils. Now add the chilled lentils and mix gently.

Cover and chill for 1 hour or longer before serving.

Great recipe to complement the grilled items. I made this recipe for our July 4th cookout. I made some substitutions. My partner doesn't do well with peppers, so I substituted chopped cucumber. Also added about 1/3 cup of shredded carrots. Used purple onions instead of green/white; since we didn't have the color going from the peppers. This is a very versatile recipe, it can be tweaked to meet your taste.

I finally went & bought some lentils from bulk. I went home & cooked it right away. When I served it to my husband, he ate it up & looked at me saying "is that all I get?" So in other words he loved it. I do to. Thank for the tip about fresh lentils. Now I'm going to go lentil crazy. lol We love this recipe.

I totally forgot to come and rate and comment when I made this! I'm making it a second time today, so I remembered to do it this time. :) My family (even my picky, healthy hating hubby!) love this! We did the rosemary since I still never bought marjoram. ;) Yum yum! So good and filling!
