I found this recipe in the first WW cookbook I bought. I have made it several times over the years.

Ingredients

1 lb
green beans, trimmed and halved
14 1/2 oz
can diced tomatoes (no salt added)
1
onion, coarsely chopped
1
small all-purpose potato, cubed
2 tsp
dried oregano
2 tsp
olive oil, extra virgin
1/4 tsp
salt (optional, i omit)
1/4 tsp
freeshly ground black pepper
freshly grated parmesan cheese

Directions Step-By-Step

In a large nonstick saucepan, bring the beans, tomatoes, onions, potato, oregano, oil, salt and pepper to a boil. Reduce the heat and simmer, covered, stirring as needed, until the vegetables are tender ad the flavors are blended, about 1 hour.

Transfer to a serving dish and sprinkle with parmesan cheese.
