Ingredients

1 lb
small red potatoes, quartered
1 1/2 c
cut fresh green beans, 2-inch pieces
1 medium
sweet red pepper, julienned
1 Tbsp
olive oil
1 tsp
garlic powder
1/4 tsp
dried oregano
1/4 tsp
dried basil
1/2 tsp
salt
1/4 tsp
pepper
2 c
chopped fresh spinach

Directions Step-By-Step

In a large bowl, combine all ingredients except the spinach. Transfer into a greased 15x10x1-inch baking pan.

Bake, uncovered, in a preheated 425-degree oven for 25 minutes, stirring once halfway through. After 25 minutes, add the spinach. Bake an additional 15 to 20 minutes or until potatoes are tender, stirring once.
