1Firstly wash the eggplants, cut into cubes sprinkle with salt and leave to one side for about 30 mins. After the 30mins rinse them with cold water and dry them with a paper towel.
2Heat 3/4 of the oil, cut the zucchini into cubes and fry with the eggplants, add the onions,oregano,cheese, salt and pepper, fry at low heat untill tender.
3beat the eggs vigoursly add the fried veggies and stir in the meantime heat the remaining 1/4 of the oil, pour the mixture and fry at low heat one side then flip over the tortilla by placing a bigger plate than the used frying pan tip over and return the undone side back to the frying pan. Can be flipped over as many times as you feel convenient.
4This I have added just for the weight watchers, cook the veggies in very little oil and finish it off in a moderate oven, using low fat cheese and 4 whole egges and 6 whites.
