Edamame Salad

This was a dish I first tasted at my daughter's. It is easy, refreshing and so good!

1 pkg
frozen, shelled edamame
1 can(s)
white shoepeg corn
1 small
red onion, diced
1/3 c
red bell pepper, diced
1/3 c
orange bell pepper, diced
1/3 c
yellow bell pepper, diced
1 small
bunch cilanto, finely chopped
2 Tbsp
white balsamic vinegar
4 Tbsp
olive oil, extra virgin
salt and pepper to taste


1Steam or boil edamame for 3 to 4 minutes and let cool.
2Combine all vegetables.
3Mix oil, vinegar, salt & pepper and whisk well. Pour, all at once, over vegetables and mix well.
