" ..the way to make Chinese cucumber side dish is to use either Indian,Japanese, Taiwanese,or Tianjin style cucumbers.the skinnier the crunchier. Kirby's are okay but when you pick them always feel it before you buy. If it's hard and breaks easily,buy it,if soft and rubbery,skip it, do the same with fruit." Anne Lee

Ingredients

cucumbers
1 Tbsp
light soy sauce
1 Tbsp
rice vinegar
1 Tbsp
sesame oil
1/2 tsp
salt
1 tsp
sugar
3-6 clove
garlic, minced

Directions Step-By-Step

Mix everything except for cucumber in a big mixing bowl

Cut cucumbers in half and place on chopping board.

Cover with plastic wrap so it doesn't splatter.

Beat or crush cucumber with blunt object like rolling pin or mace.
Roughly chop up the pieces.

Mix cucumbers with sauce and chill in fridge for 30 min...then serve.
