Ingredients

1 large head of cauliflower
3 Tbsp heavy cream
2 Tbsp butter
3 oz sharp cheddar cheese shredded
1 Tbsp chives, dried
salt to taste
fresh ground pepper to taste
2 slice bacon, fried and crumbled.

No this is not mashed potatoes but I think these are as good if not better. And for sure they are healthier!

As I continue to do a low carb diet, I am finding that this diet does not have to be boring. Even if you aren't low carbing this is an excellent and healthy side dish.

And did I mention; my mashed potato lover had 2 helpings! Well, he did have mashed potatoes too but he was impressed with this dish!

I was truly surprised at how wonderful and flavorful this turned out! It was a wonderful side dish to go with our hamburger steak.

Directions

Clean and trim the cauliflower; break in to pieces. Place in a microwave safe dish, add 2 tbsp of cream and 1 tbsp butter. Microwave on high for 5 to 6 minutes uncovered, remove from microwave and stir to coat cauliflower with the cream and butter mixture. Return to microwave and heat on high an additional 5 to 6 minutes uncovered.

Transfer the hot cauliflower and any cream and butter that was left in the bowl to a high speed blender. Add remaining 1 tbsp of cream, and 1 tbsp butter as well as the cheese (reserve a little of the to sprinkle on top), salt, pepper and chives. Process, scraping down sides as needed until creamy. NOTE: This dish is not as creamy as mashed potatoes. Still very good!

Transfer mixture to a serving bowl and top with a little of the shredded cheese and bacon bits.

Dana I am amazed at how good this turned out. I've never been a big fan of cauliflower. I don't dislike it but it was just never a favorite veggie. I think that has changed!!

We had cauliflower mash the other night nearly the same recipe only no cheese as hubby can't have and I used bacon bites..instead of cheese I used 1/4 cup instant mashed potatoes. with chives on top..
and they were delicious..

Thank you all! This was really a very nice side...thinking about adding an egg to the leftovers and maybe some minced onion and frying some patties.
