Just a nother way o stuff mushrooms. And i love stuffed mushrooms.

Ingredients

large mushrooms (fresh),caps reserved,stems minced.
1/3 c
butter, unsalted
2 tsp
minced onion
3/4 c
bread crumbs
2 Tbsp
fresh parsely minced
2 Tbsp
fresh lemon juice
1 tsp
salt
3 oz
(3/4 cup) goat cheese crumbled
2 (1/2 cup oz
blue cheese crumbled
1/4 stick
butter, unsalted

Step-By-Step

1place mushroom caps,hollow side up,in9x13-inch baking dish. Preheat oven to 450f.
2melt buter in a medium skillet. Add miced stems and onion,and saute over med heat untill soft. Remove from heat and add bread crumbs,parsley,lemon juice,and salt. Mix well:cool to room temperature.
3Stir in cheeses until combind. Spoon cheese mixture into mushroom caps. Brush with melted butter. Bake 5-7 minutes until lightly browned.
