Hubby LOVES this salad! Can be made low-carb and lowfat! Great alternative to coleslaw.

Ingredients For cauliflower salad

  • 4 c
    blanched cauilflower
  • 2 -3 Tbsp
    reduced fat mayo
  • 3 tsp
    apple cider vinegar
  • 1/4 c
    red onion , thinly sliced
  • 2-3 pkg
    artificial sweetener
  • 2 tsp
    dijon mustard
  • 1/3 c
    raisins
  • pinch
    salt and pepper to taste
  • 1/2 c
    frozen english (green) peas , thawed
  • 5 slice
    bacon ; cooked,drained & chopped (optional)

How To Make cauliflower salad

    To blanch cauilflower: bring a large pot of slightly salted water to boil. add cleaned and chopped cauliflour. Boil until just crisp tender (2-4 min depending on how small you chopped the cauliflower.) drain and put cauliflower into icewater to stop cooking. Let cool . Drain. Set aside.

    Mix all remaining ingredients(except peas)

    Fold in cauliflower and peas. Add bacon if desired. refridgerate .
