This is another dish that lends itself well to "toting" either to a family gathering or a potluck dinner.

Casabah is a milder tasting squash than zucchini but you can substitute zucchini in this dish with good results.

Ingredients

8 medium

1 large
white onion
1 medium
jalapeno pepper
1 can(s)

1 clove
garlic
1 c

1/2 c
sour cream
dash(es)
paprika
salt & pepper to taste

Step-By-Step

1Preheat oven to 325º

Peel and quarter onion
Peel garlic clove and cut in half
De-seed and de-vein jalapeno pepper and cut in half

2Cut squash into very thin slices into microwave safe bowl.

Season with salt, pepper and paprika, add 1 teaspoon oil and place in microwave covered with paper towel or paper plate for 4 minutes

3While squash is cooking, place onion, garlic, jalapeno in food processor and pulse until finely chopped

4Heat remaining oil to medium high in heavy skillet.

Transfer cooked squash and chopped vegetables to skillet and saute for about 3 minutes, stirring frequently to avoid burning

5Add tomatoes (including juice)

Turn heat down and simmer for 15 minutes

Bake at 325º for 15 minutes uncovered
