Butternut Squash Quinoa

butternut squash cubed
olive oil
salt and pepper
2 c
chicken broth
1/2 c
1 Tbsp
olive oil
2 c
mushrooms sliced
1 Tbsp
garlic minced
1 c
quinoa (we used red and white)
1 Tbsp
thyme, leaves
1 Tbsp
sage leaves, fresh
1/2 c
peas frozen
1/4 c
parmesan cheese
2 Tbsp
walnuts chopped

Directions Step-By-Step

Preheat oven to 425F toss squash. Place in oven for 25 minutes stiring every ten minuts untill tender. Set aside.
Toast quinoa in a sauce pan, add onions, garlic and broth cook for 15 minutes.
Add mushrooms peas, thyme and sage cook for an additional 5 minutes
Garnish with walnuts and cheese
