Bed o' Beans (Green Beans)

My husband, who is not terribly fond of string beans, made this for Christmas Dinner. These are so good! He liked them too! They're a great side dish, and they also make a nice bed for steak or lobster.

This was actually part of a recipe for lobster (that we didn't like too much), but these beans were awesome!

1/2 lb
bacon, thick sliced
sweet onion, halved & sliced thin
1/2 lb
fresh string beans, julienned
1 tsp
garlic, minced
1 tsp
parsley, chopped fine
salt & pepper


1In a large cast iron skillet, cook bacon until just crispy.

2Remove bacon & cut into long slivers. Return to skillet.

3Add the onions and saute for 2 mins.

4Add the beans & continue to saute for 2-3 mins until tender crisp.

5Season with salt & pepper. Add in the garlic. Serve.
