Via our CSA box notes-original recipe source unknown. Will also work substituting golden beets. I added the shallots. Easy!

Roast

Ingredients

1 bunch
beets, tops trimmed, scrubbed well and either cut in half or quartered (depending on their size)
1 large
shallot, peeled and cut into crescents
2 Tbsp
coconut oil
1/2 tsp
ground cumin
1/2 tsp
spanish smoked paprika
pinch
chili powder (we tried aleppo powder)
1/4 tsp
salt
1/4 tsp
cracked black pepepr

Directions Step-By-Step

Preheat oven to 400 degrees.


Note: I don't peel the beets but you can if you prefer.

Toss beets and shallot with coconut oil and lay flat on sheet pan. Toss with the remaining ingredients. Roast for 40 minutes, or until tender.

Sprinkle with some additional salt and pepper, if desired. Serve warm.
