Sauteed Zucchini with Feta and Oregano

I like to use one zucchini and one yellow squash. GO OREGON DUCKS!

For my WW friends, 1 SP per serving.

Stove Top

Ingredients

2 tsp
olive oil
2 medium
zucchini or yellow squash cut into 2 inch chunks
1 tsp
dried oregano
2 Tbsp
parsley, freshly chopped
1/8 tsp
salt
1/8 tsp
pepper
3 Tbsp
crumbled feta cheese

Step-By-Step

1Heat oil in pan over med-high heat. Add zucchini and oregano. Stir occasionally until crisp-tender (4-6 minutes).
2Remove from heat. Stir in parsley, salt, and pepper.
3Transfer to plates and sprinkle with cheese.
