Paleo Cauliflower Rice with Carrots

Made this for my family and didn't tell them it was cauliflower. After they ate it, then I told them - they were surprised!

This has become a staple for us. I make it at least once a week.

Ingredients

head cauliflower
1
onion, medium size, chopped
1-1/4 c
carrot, shredded (i buy mine shredded)
1 tsp
garlic, minced
1/2 tsp
trader joe's 21 seasoning salute blend
1/4-1/2 tsp
seasoning salt (adjust more or less according to your taste)
1 Tbsp
coconut oil, heaping

Step-By-Step

1Wash & cut cauliflower, put into food processor and pulse till resembles the texture of rice, put aside.
2In large saute/fry pan, add the coconut oil, carrots and onion. Saute till onion starts to get translucent, about 10 minutes
3Add garlic to the mixture and saute for about 1 minute
4Now add the cauliflower, stir, and saute for about 2 minutes, add 1-2 tbs of water as needed, cover, lower heat and cook for an additional 10-12 minutes or until tender (depending on the size of your head of cauliflower).
5Serve and enjoy!
