This recipe was one of my favorite side dishes my aunt made when we had dinner at her house. I continue the tradition at family dinners.

Ingredients

4 c
raw carrots, grated
1 c
butter, softened
2 c
eggs
1/2
brown sugar
1- 1/2 c
flour
1 tsp
baking powder
1 tsp
baking soda
1 tsp
salt
1 tsp
lemon juice

Directions Step-By-Step

Cream butter, add sugar gradually. Add eggs,
Combine dry ingredients and add gradually to the mixture. Add lemon juice.

Add grated carrots and mix well.( I use an electric mixer.)
Grease a casserole dish well. Pour the mixture into the dish and Bake at 350' for and 1 hour and 15 minutes. Enjoy !!
