BROCCOLI CAULIFLOWER SALAD (WITH STEVIA & HONEY)

I love broccoli and cauliflower and I love cold salads, but I don't eat refined sugars anymore & I do not eat artificial sweeteners at all. So I created this recipe with no refined sugar. Much healthier. Most salad dressings are loaded with sugars or artificial sweeteners, preservatives and other nasty ingredients that cause inflammation and are toxic to your body. I hope you like it as much as I do.

20 Min

Method:

Refrigerate/Freeze

Ingredients

1 bunch
broccoli, cut into bite size pieces
1 bunch
cauliflower, cut into bite size pieces
1/2
red onion, chopped
1/2 c
raisins

DRESSING

3/4 c
mayo with olive oil
1/4 c
plain greek yogurt (organic is best)
1 Tbsp
apple cider vinegar
1 tsp
lime juice
1 Tbsp
orange juice
1/4 c
stevia or ideal
1/2 c
pure honey
1 tsp
salt
1 tsp
cayenne pepper or hot sauce

Directions Step-By-Step

1
Add all dressing ingredients to small bowl and whisk together until completely smooth. If dressing is a little thick, add a couple of teaspoons of milk to thin it out. If you want it sweeter add a little more Stevia or Honey.
2
Place broccoli, cauliflower, onion and raisins in a large bowl. Pour dressing over veggies and mix until thoroughly coated.
3
Refrigerate at least a few hours before serving, preferably overnight. Taste better the longer it sits.
4
OPTIONS - For extra flavor you can add a few pieces of crispy bacon, dried cranberries, sunflower seeds, walnuts, pecans, or whatever you like.
