Ingredients

1 c
rice, long grain,uncooked
1/4 c
quinoa,red,uncooked(you can find this in the organics section of your supermarket or at a health food store)
1/2 small
sweet potatoes,shredded
1/2 Tbsp
salt
2 Tbsp
butter
1 tsp
olive oil

Directions Step-By-Step

Combine the rice with the red quinoa and cook it in two and a quarter cups of water,add the salt and the olive oil when it begins to boil. Lower to simmer,slightly covered for twenty minutes.

Remove from heat,add the shredded sweet potato,fluff the rice with a fork and add the two tablespoons of butter,cover and let it sit for ten minutes before serving. Fluff again before serving,enjoy!! :)
