Ingredients

1 c
rice, uncooked basmati or parboiled
1
lemon
1/2 c
cilantro, fresh
salt to taste
2 c
water

Step-By-Step

1zest lemon, set aside.
2In a pot, place rice and water, add lemon zest and squeeze the lemon juice (discarding seeds) add salt to taste.
3bring to boil, then to low for 20 mins...add fresh chopped cilantro and gently stir...serve as a side. Yummy
