Ingredients

3 lb
red potatoes, cut in 1/2" pieces
1 large
yellow onion, chopped
1/2 c
olive oil
1/2 Tbsp
salt
1/2 Tbsp
pepper

Step-By-Step

1Preheat oven to 425 degrees F. Grease a 9x13" baking dish. Put potatoes, onions, olive oil, salt, and pepper into baking dish and stir together.

2Bake for about an hour, or until potatoes are golden brown and crispy, stirring every 15 minutes.
