Make Ahead Mashed Potatoes

These are the best potatoes we have ever had! Perfect to eat right away, or save up to 3 days then bake.

Ingredients

8 large
potatoes
1 medium
onion
1/2 c
butter
8 oz
cream cheese, low-fat
1/2 c
sour cream, lite
1 large
egg, beaten
salt and pepper to taste

Step-By-Step

1Boil potatoes with chopped onions until tender, about 10 minutes. Drain & mash while hot.

2Add butter, cream cheese, sour cream to potatoes and mix.

3Add a spoon of hot potato mixture to beaten egg, stir, and then add to entire potato mixture. (This tempers the egg.)

4Salt and pepper to taste.

Eat, or save until later. Bake at 350 degrees for 30 - 35 minutes. Keeps up to 2 or 3 days.
