Ingredients

2 lb
potatoes, all-purpose.
5 oz
bacon diced
8 oz
red onions diced
4 oz
white wine vinegar
3 Tbsp
dijon mustard
18 oz
chicken stock heated
1/3 c
fresh chopped chives
salt to taste
fresh ground black pepper
1/2 c
olive oil

Step-By-Step

1cook the potatoes in simmering water until tender.drain

2saute the bacon until it is nearly cooked.add the sweet red onion, then drain off exces fat.

3add the vinegar, olive oil, salt & pepper, mustard, warm stock & chives to the bacon simmer pour the dressing over the warm potatoes serve the salad warm
