Super Easy Puerto Rican Rice and Beans
I use this as a side dish and as a main course.

- 16 oz cans goya red or kidney beans
- 1 large
- waxy potato, cut to 1/2 inch dice
- packet goya sazon con culantro y annato seasoning
- 16 oz can tomato sauce
- 1 1/2 Tbsp
- homemade sofrito, or packaged - i use goya
- olive oil
- salt to taste
- cooked rice, any kind
1In a pot, sauté the sofrito in a little olive oil for a couple of minutes.
2Add all the remaining ingredients except the rice and cook covered until the diced large waxy potato is tender.
3Serve over rice.
