Ingredients

1 c
whole grain brown rice
1 1/2 c
water
1/2 c
rotel with juice
4 oz
can of diced green chilies
1
chicken or beef low sodium bouillion cube, desolved in water
2 Tbsp
olive oil
1 tsp
ea. of granulated garlic & cumin, & black pepper
1/4 tsp
salt
1 Tbsp
paprika

Step-By-Step

1In a pot or skillet, heat olive oil, add rice & spices. Simmer for 5 minutes. Add liquid and green chilies, bring up to a boil, reduce heat to simmer, cover & cook approx. 45 min. - 55 min. till tender.
