This quick and easy rice makes a great side dish to any BBQ as well as a dessert.

Ingredients

2 c
short grain wild rice
1 can(s)
coconut milk ( i got mine at a chinese store)
1 can(s)
small crushed pineapple
water if needed

OPTIONAL

1/4 c
toasted coconut added at last second as topping

Directions Step-By-Step

Drain the pineapple reserving the liquid and set a side. Combine the coconut milk with the liquid from the pineapple and add water to equal 4 cups. Heat to boiling with rice and pineapple .
simmer covered about 20 minutes until all the liquid is gone.
serve hot or cold. if using as a dessert serve cold with vanilla, cinnamon or pineapple ice cream on top
