sweet potatoes, diced
red bell pepper, seeded and diced
green bell pepper, seeded and diced
underripe bananas, thickly sliced,
thick slices of white bread, crusts removed, diced..or croutons
salt and pepper, to taste
Boil the sweet potatoes for 10-15 minutes, until tender. Drain thoroughly and reserve.
Meanwhile, melt the butter in a skillet and add the lemon juice, garlic, and bell peppers. Cook for around 3 minutes stirring constantly.
Add the banana slices to the pan and cook for a minute. Remove the bananas from the pan with a slotted spoon and stir into the potatoes.
Add the bread cubes to the skillet and cook, stirring for around 2 minutes, or until golden brown on all sides.
Mix the dressing ingredients together in a small pan and heat until it is runny.
Spoon the potato mixture into a serving dish, season to taste, and pour the dressing over the mixture along with the croutons. Serve immediately.
