shredded cheddar cheese ( i use mild)
peel, cube and cook potatoes in boiling water until fork tender and drain.
In a large bowl add all ingredients together. Reserve 1/4 of the cheese for later.
With potato masher mix everything together. The cheese will melt from the heat of the potatoes. Pour into a casserole dish and top with the remaining cheese. Bake at 350 degrees for about 20 mins.
