Rich Mashed Potatoes

The cheese in this really enhances the flavor of the potatoes. Sometimes I don't bother to peel the potatoes. It not only saves time and effort, but it adds a bit of texture and nutrition.

Ingredients

3 1/2 lb
potatoes, peeled
1 c
cheddar cheese, shredded
1/2 c
butter
1 tsp
garlic powder
2 tsp
salt
1/4 tsp
pepper
1 1/2 c
sour cream
chives, chopped

Step-By-Step

1Cook potatoes in water to cover 25 -30 minutes until tender.
2While still hot, mash roughly with potato masher and add cheese. Continue to mash until cheese is well incorporated.
3Mash in butter, garlic powder, salt, and pepper.
4Finally, add sour cream and mash or whip. If you desire your potatoes a bit thinner, add cream or milk until desired consistency. Reheat if necessary.
5Serve with extra butter and a generous sprinkling of chives.
