Okra lovers DELIGHT! This is a vegetarian version of something one might find with shrimp. Adding carrots and beautiful red and yellow peppers makes it much more inviting.

We love to find new ways to use okra. Slices of okra have a mild flavor, so carrots and sweet peppers add a sweet flavor to the fritters. Easy to prepare, they're fried to a lovely golden brown that creates a nice crust. Dip these okra beignets in your favorite sauce or top with a drizzle of hot honey. Yum!

Ingredients For okra beignets

  • 2 c
    thinly sliced okra
  • 1/2 c
    finely diced red and yellow sweet peppers
  • 1/4 c
    finely diced onion
  • 2 lg
    eggs, lightly beaten
  • 1/2 c
    grated carrots
  • 1/4 c
    heavy cream
  • 1 c
    Panko bread crumbs
  • 1 c
    all-purpose flour
  • 1/2 Tbsp
    baking powder
  • 1 c
    vegetable oil (enough for frying)
  • salt and pepper, to taste
  • GARNISH
  • 1 bunch
    green onions sliced thin or chives

How To Make okra beignets

  • Thinly slice okra. Chop the sweet peppers and onions to a fine dice. Grate the carrots and mix in a large bowl.

  • In another bowl, slightly beat the eggs and add the whipping cream. Pour over the veggies.

  • Combine the flour, Panko crumbs, and baking powder.

    In a separate bowl, combine the flour, Panko crumbs, and baking powder. Use a fork to incorporate it all.
  • Add the Panko mix to the veggies and mix with a rubber spatula.

    Add the Panko mix to the veggies and mix with a rubber spatula. Meanwhile, heat the oil to 350 F. I use my electric skillet for this because it maintains the heat much better than a skillet.
  • Fry the okra beignets.

    If you have disposable food service gloves, don them now... this is a sticky mess. Pack about 1/4 cup of the mix onto the rubber spatula and slide it into the hot oil. Keep adding in patties. You will know when they have been browned enough to turn (about 3 minutes on each side). Remove to a paper towel-lined plate. Garnish with thinly sliced green onions.
