Griddle

Ingredients

1/2 c
unsifted all-purpose flour
1 tsp
baking powder
1/2 tsp
salt
1/2 tsp
ground pepper
2
eggs, slightly beaten
1/2 c
milk
2 Tbsp
butter, melted and slightly cooled to not scramble the eggs
1
12oz. canned corn drained
2 Tbsp
onion, finely chopped
1 Tbsp
fresh parsley, chopped, or 1 tsp. dried parsley

Step-By-Step

1Whisk together flour, baking powder, and salt and set aside. Combine eggs, milk, melted butter, corn, onion, and parsley. Stir in dried ingredients until batter is well blended.
2Lightly grease non stick griddle with butter. Use an ice cream scoop or 3 tblsp. and drop onto med/hot griddle. Fry until golden brown on each side. My grandmother would butter then before serving, others would drizzle maple syrup.
