Notes from the Test Kitchen:
When it comes to salsa I just can't get enough variety. I want to try every recipe I come across! When I saw this recipe had pineapple in it, I was intrigued. And rightfully so! The mango and pineapple add a delicious citrus-y sweetness to the spicy jalapenos. It was perfect served alongside a fillet of baked orange roughy.

1 c
pineapple, fresh diced
1 c
mango, fresh diced
1 small
onion, chopped fine
jalapeno pepper, seeded & finely chopped
1/4 c
cilantro, fresh chopped
1/4 c
flat leaf parsley, fresh chopped
limes, juiced
zest of lime
1/4 c
olive oil, extra virgin


1Place first 6 ingredients in bowl.

2Add the juice from the limes, lime zest, and mix thoroughly.

3Stir in the EVOO until thoroughly mixed.
