Ingredients

1 c
fresh corn kernels
1/4 c
red bell pepper, chopped
1/4 c
yellow bell pepper, chopped
1/4 c
diced tomatoes
2 Tbsp
fresh cilantro, chopped
2 Tbsp
lemon juice
1 Tbsp
finely chopped green onion
1/2
jalapeno chili, minced
1 c
peeled, diced avocado

Step-By-Step

1Cook corn until tender, drain and cool. Transfer to medium bowl. Add remaining ingredients, except avocado and toss gently. Mix diced avocado into salsa. Season to taste with salt and pepper. Makes 2 1/3 cups.
