12 tomatilloes, fresh
1 green tomato, fresh
3 red vine ripe tomatoes, fresh
3 jalapenos, fresh
1 serano pepper, fresh
1 medium red onion
1 small white onion
1 red pear, fresh
1 Tbsp minced garlic
1/4 c chopped cilantro, fresh
2 juice of lime, fresh
2 zest of lime, fresh
2 Tbsp olive oil, extra virgin
salt & pepper to taste

Janice's Notes:

Serve well chilled. The longer it stands the hotter the salsa gets.

This salsa can be served with corn tortilla chips, as a compliment to any meat or fish dish or with an omelet. The choices are endless.

To cool down the salsa either reduce the amount of seeds from the peppers or do not add any seeds for a mild flavor.

Directions

Dice all vegetables or if desired, chop in blender

Add the juice from the limes, lime zest, and mix thoroughly.

Stir in the EVOO until thoroughly mixed.

Add salt & pepper to taste

Now this is a Salsa I can wrap a tortilla around. This sounds devine. Next time I make salsa this is the one to try. Thanks for sharing your recipe. This would also be good on grilled fish or chicken.

I have a question about the tomitillos. I once tried making salsa with them uncooked, since the recipe didn't say to cook them or roast them first..as does urs.. Those things just would not chop up in the food processor and tasted tart and crunchy. I have since had success using them in verde sauce..but only cooked first. So please let me know. This sounds like a grea recipe. Congrats on the main page post.
