Coconut Rum Sauce

Ingredients

1/2 lb
(2 sticks ) unsalted butter, melted
2/3 c
heavy cream
2/3 c
coconut milk, unsweetened
1 c
sugar
1/3 c
packed light brown sugar
1 large
egg yolk ,beaten
1 c
dark rum

Step-By-Step

1Combine all ingredients except the rum in a small saucepan and cook over med-low heat, whisking constantly, until sauce has thickened and coats the back of the spoon, about 10 minutes. DO NOT allow the sauce to boil or the eggs will curdle and the sauce will not be smooth. Note: If it does happen, the simply strain through a fine-mesh sieve.
2Remove from the heat, stir in the rum and set aside to cool slightly.
