Ingredients

4 lb
cherries
1 c
water
2 c
vinegar
3 c
sugar
1/2 tsp
ground nutmeg
1/2 stick
cinnamon
1 tsp
ground cloves
1 tsp
ground allspice

Directions Step-By-Step

Pit the cherries. Cook any bruised or imperfect fruit 30 minutes with the water, mash with a spoon, strain through a sieve, and keep. This is your cherry syrup.

Mix the cherry syrup, vinegar, sugar, and spices. Cook 30 minutes and let cool. Put the cherries in a large bowl and pour the cooled vinegar over them. Let stand 3 days, stirring from time to time.

On the third day pour off the vinegar, boil it up, and let it cool. Put the cherries in sterilized jars. Fill the jars with the vinegar. Seal and keep in a cool, dry place. Allow to mature for 2 months before using.
