We love cheddar spinach at this house. All our sons (5 and one on the way) love it too. This is an excellent side to steak or even a dip in a bread bowl.
1 1/2 c
extra sharp cheddar
lemon pepper salt
1In a large pot, place butter, garlic, and spinach. Cook on medium to high heat. Wilt spinach until soft. You may also use frozen spinach.
2Add cheese and buttermilk. Lower heat to low medium. Stir occasionally, until thickened.
3Add lemon pepper salt to taste.
