Heat the reserved clam juice, but do NOT boil. Cube cream cheese and place in food processor. Pour heated clam juice over the cheese. Pulse once or twice to begin processing.
Add all other ingredients except clams and garnish. Process until desired smooth texture. Fold in clams. Cover and refrigerate for at least 1 hour before serving. Prior to serving, top with desired garnish and serve with chips, crackers or veggies.
