Ingredients

6-8 lg plum tomatoes, cored, seeded and chopped into 1/4" pieces
1-2 clove garlic, finely minced
1 bunch of fresh basil, finely chopped
1/4 c olive oil
2 Tbsp red wine vinegar
1 -11/2 tsp kosher salt
1/8 tsp fresh cracked black pepper
2 bx melba rounds, any flavor

Anna's Notes:
Every good Italian knows how to make bruschetta! So this is my version.

Bruschetta refers to the bread the tomato salad is served on. But I choose to serve mine with melba rounds, any flavor you like, garlic,sesame,poppy etc. So my version is more like a "dip". Great for a party or even served over grilled chicken.

I hand chop my ingredients because a food processor makes the tomatoes too fine.

Directions

Combine all ingredients. Mix well and taste to adjust salt and pepper. Add more to taste.

Refrigerate and let sit over night to marry flavors.

Remove from frig about 1 hour before serving. Flavors taste better at room temp. Serve with melba rounds. Enjoy!

yup...all of my side of the family is there. My husbands side is in Corpus Christi, TX....so we're here in the middle in Knoxville :)

Thanks Anna, hubby wanted some bruschetta with our garlic bread, this is exactly what I wanted, knew all the ingredients but wasnt sure what vinegar or what measurements! excellent!!!
