This is a great recipe for that summertime- what can I have for lunch that is cool and crisp and won't take a lot of time to make?

Ingredients

1 medium
red ripe tomato, diced
1 pkg
your choice of salad greens
1 small
cucumber, unpeeled, diced
1 medium
green onion, chopped
1 small
apple, unpeeled sliced
6 oz
can solid albacore tuna, drained and flaked
1/4 c
dried cranberries or golden raisins
2 Tbsp
sunflower seeds, unsalted
1/2 c
black beans, rinsed, or garbanzo beans, optional
RASPBERRY VINAIGRETTE:
1/2 c
lite raspberry juice
2 Tbsp
cider vinegar
1 Tbsp
orange juice
1/2 tsp
grated orange rind
1/4 c
olive oil
1/2 tsp
equal sugar substitute

Directions

Combine ingredients in a large salad bowl and toss lightly. Serve raspberry vinaigrette on the side.

Raspberry Vinaigrette:
Combine ingredients in a jar with a tight-fitting lid; shake well. Chill until ready to serve.
