Chicken Pasta Salad w/ Balsamic Garlic Dresing

Found and made a Balsamic dressing recipe, then built a pasta salad around it! Yummers

Ingredients

1-1/2 lb
boneless chicken breast, cut into bite-size pieces
8 oz
farfalle (bow tie) pasta
1 medium
red onion, diced
1 c
grape tomatoes, halved
1 large
zucchini,sliced thick, then cut into quarters or bite-size pieces
6 oz
crumbled feta

DRESSING INGREDIENTS

2 clove
garlic
1/4 c
balsamic vinegar
2 Tbsp
honey
1 Tbsp
dijon mustard
1/2 tsp
salt
3/4 c
olive oil.

Step-By-Step

1In a large pot, boil salted water. Cook pasta until al dente', drain. Run pasta under cold water. Add to Large resealable Bowl. Drizzle in a little olive oil. Stir to coat, so noodles won't stick.
2Using a non stick Skillet, cook chicken until no longer pink. set aside.
3In a food processor or blender, add dressing ingredients, minus olive oil. Drizzle in olive oil. Blend thoroughly. Pour over noodles, toss well. Add in cut vegetables. Toss again.
4CHILL 30 min. Add crumbled Feta to each individual serving bowls.
Ps. You may use Cucumbers, broccoli or mushrooms, etc.
