- cooked package cornbread mix
- medium sized vidalia onion, chopped
- slices cooked and crumbled bacon
- 1/2 c
- sweet pickle relish
- 4 c
- chopped tomatoes
- red bell pepper, chopped
- 1 c
- 1/2 c
- sweet pickle juice
1Cook cornbread according to package directions or use your own recipe. Cool cornbread and break into pieces.
2In a separate large bowl mix together onion, bacon, relish, tomatoes and bell pepper.
3In a separate bowl mix the mayonnaise and pickle juice.
4Layer the ingredients in a pretty glass bowl as follows: 1/2 cornbread pieces, 1/2 vegetable mixture, 1/2 mayo/juice mix. Repeat with other half of ingredients. Cover and refrigerate at least 3 hours or overnight. This blends the flavors and makes it unbelievably good! It's great for a Southern family reunion.
