Ingredients

3 1/2 small
ripe tomatoes
6 oz
fresh mozzarella cheese
4 Tbsp
extra virgin coconut oil
1 tsp
balsamic vinegar
Four
basil leaves (fresh)
pinch
sea salt and black pepper to taste

Step-By-Step

1Wash and slice the tomatoes into half moon slices
2Slice the mozzarella into cube pieces
3Arrange the tomatoes and cheese on a dish and sprinkle with basil
4wrap the dish and refridgerate for 30 mins
5Now to make the dressing: in a small mixing bowl whisk the salt, pepper, vinegar and coconut oil together until well blended then remove dish from fridge apply the dressing and serve enjoy
