Jane's Story

We were discussing mac salad in Chatterbox, and then I remembered I have a pict plus wrote down directions to a pasta salad I make all the time.
When I was working I got a lot of requests for this.
I know all you gals in Just A Pinch have your own version, and from what I saw they all looked YUMMY, here is one of my versions.

8 oz
pasta,i like spaghetti or farfalle for this
3 Tbsp
green bell pepper, diced
1/2 stick
celery, diced
1/2 small
red onion, diced
2 oz
thinly sliced deli ham, diced
4 oz
extra sharp cheddar cheese, small dice
1/2 tsp
salt and pepper, or to taste
3/4 c
plus 1/4 cup more ranch salad dressing

Directions Step-By-Step

Cook pasta per package directions, and run cold water over to cool. Drain very well.
Add all other ingredients, plus the 3/4 cup Ranch dressing.
Cover and chill, when ready to serve see if you need to add more Ranch dressing, as most pasta's will soak up the dressing and make your salad a little dry.

Jane this looks so good! I love pasta! I throw everything in it but the kitchen sink! Never tried it with Ranch dressing though! Saving this one for sure!

Yup I make it with ranch dressing or Italian dressing, either way it's good. When I make it with Italian I use the tri colored spirals for color.

I don't think I have ever made a pasta salad with spaghetti...usually just about any other type. However, I'm going to try this as it looks mighty tasty!

When my two sons got married two years ago I made all the food for their rehearsal dinner and there were over 30 people there! I made a huge pasta salad which I call loaded pasta salad and a roasted red potato salad which was a huge hit. Their pastors requested the recipe! I was thrilled to death that everything worked out!

Doesn't that just make you feel so good.
Every time when we have a get together here I try to bring at least one of my "bestest" dishes. There are so many peeps that don't cook, anything good will get great compliments. My biggest surprise was the reception to my dill pickles.
I am having two of the Ranger's wifes come and help me make dill pickles this year because they were floored by the taste. When I told them how simple they were, that did it. I am having a dill pickle bee at my house when the dill comes in this year. :)
