1 16 oz pkgorzo pasta

1/2 colive oil

1/4 tspground saffron

2 clovegarlic, minced

3 Tbspfresh lemon juice

2 tspground turmeric

1 tspsugar

1/2 tspsalt

1/4 tspground cumin

1/4 tsppepper

2/3 cpine nuts, toasted

1/4 cchopped fresh mint

1/4 cchopped fresh flat leaf parsley

How To Make saffron orzo salad with pine nuts

1Combine currants and boiling water and let stand for 5 minutes. Drain and set aside. Cook orzo according to package directions; drain. Set aside and keep warm.

2Combine oil and saffron in a bowl. Let stand for 15 minutes. Stir in garlic and next 6 ingredients. Add orzo and toss. Let cool. Add currants, pine nuts, and remaining ingredients. Toss.
