Ingredients

1 1/2 lb
brussel sprouts, finely shredded
1/3 c
uncle gary's gourmet peppers
1/2 c
mini colorful peppers, julienned
1/4 small
red onion, chopped
2
garlic colves, minced
2 Tbsp
cilantro, chopped
4 oz
queso fresco, crumbled

MEXICAN DRESSING

2/3 c
mayonnaise-more if needed
1 tsp
cumin
1/2 tsp
chipotle chili powder
1 1/2 tsp
smoked sea salt-to taste
1 tsp
brown sugar
zest and juice of 1 lime

Directions Step-By-Step

Combine ingredients 1-6 in a mixing bowl. Mix dressing ingredients in a small mixing bowl and add to veggies. Mix well and chill for at least 1 hour. When ready to serve, top with queso fresco.
