Mediterranean Summer Tomatoes
This is such an easy but elegant looking recipe...and it is really good! With summer and fresh tomatoes on the way, it's a must try!

- fresh tomatoes
- shallots, coarsely chopped
- 1/2 c
- olive oil
- 1/4 c
- balsamic vinegar
- loaf of french bread, for dipping (optional)
1Core and slice tomatoes; arrange in shallow serving dish. Sprinklel shallots over tomatoes. Whisk together the olive oil and balsamic vinegar, then pour over tomatoes. Let stand 5 minutes before serving (can be refrigerated, covered, for up to 3 days). Eat with French bread, and dip bread in marinade after tomatoes are done.
You can add fresh cucumber slices around the tomatoes as well. And use warmed baguettes for the bread.
