Mediterranean Chickpea Salad

Ingredients

1 can(s)
low sodium chickpeas, drained and rinsed
1/2 pt
cherry tomatoes, quartered
1
cucumber, seeded and chopped
4 oz
mozzarella cheese, cubed
1/4 c
red onion, finely chopped
1 Tbsp
lemon juice
1/4 c
olive oil, extra virgin

Step-By-Step

1In med. mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, cheese, onions and parsley until combined; set aside. In separate med. bowl, stir together lemon juice and olive oil, whisking constantly until oil is well incorporated. Toss Olive oil-lemon dressing with reserved veggies until coated completely. Serve chilled or at room temperature.
